We met with Sebastien Caillat, the son-in-law and Lamy-Pillot estate winemaker. The Lamy-Pillot style produces
crisp, pure fruit and a distinctive flinty minerality for his white Burgundies and luscious, well-structured
red Burgundies from the best pinot noir plots in Chassagne-Montrachet and Premier Cru plots in Blagny.
Winemaking style
He has also set up a tiny estate in 2008 with his wife as a personal project and it’s called the Lamy-Caillat estate. When we say it’s tiny, compared with other Burgundy family estates, they only have 1.5 hectares (5 acres) of vineyards producing about 7000 bottles of exquisite wines per year.
The wines he makes on this estate are modern with a slight struck match reduction, textured with concentrated fruits. The concentration is evident and perfectly mastered, with riper fruit profile and fine acidity even in the warmer vintages. The wines are aged in oak barrels for 1 year and then 1 year in stainless steel tank with lees to keep in the freshness. There is no battonage.
These wines have come to be known as “cult wines”, as Bill Nanson says, “almost nobody gets to buy them!”.
