- ABOUT THE ESTATE
The Domaine Tortochot, located in Gevrey-Chambertin, goes back to the 19th century and is currently run by Chantal Tortochot (4th generation). The estate covers 12 hectares (28 vineyard plots), almost exclusively in Gevrey Chambertin producing wine that are of great finesse and complexity, even in the difficult years. Multiple awards testify the quality of wines. Chantal has proved both her talent and perseverance after leaving her job in a petrochemical company, to come and work with her aging father on the estate in 1997. She has single-handedly brought the estate up to modern standards, including becoming organic, rethinking the branding, and renewing an aging clientele.
- VINIFICATION
HARVEST: Manual & hand sorted.
VINIFICATION: 100% destemmed, traditional vinification in thermoregulated tanks (some enamel) using natural yeasts and no punching of cap.
MATURING: 15 months. 40-50% new oak. Kept on lees in barrel until December.

- TASTING NOTES
TASTING NOTES: A very expressive pinot with dominant notes of cherry, raspberry, smoke and chocolate. Medium bodied palate with a surprisingly rich and rounded finish. A splendid wine bursting with fruit and charm.
FOOD & WINE PAIRING: This Pinot Noir will go with rather delicate dishes that are to some degree aromatic – vegetable salads, meat or poultry tarts, or simmered beef and vegetables (pot-au-feu). Moreover, their delicacy makes them a perfect choice for those who like red wine with fish. Their natural elegance predisposes them towards veal, cold tabbouleh, or hard cheeses like Gouda

AGEING POTENTIAL: 6 to 8 years.
SERVICE TEMPERATURE: 14/15°
As this is a young wine, I would suggest opening 1 hour before serving or pouring into a carafe (if you do not have much time) to let the aromas open.
