- ABOUT THE ESTATE
Sophie took over the family estate in 2000 and started making the estate wines in 2005. The estate is small, only 2.5 hectares around the village of Fuissé. She intends to be fully organic in the next 4 to 5 years. Each year one or two plots are converted to sanitary protection, with no pesticides used and strict control of the soil. Sophie believes in “one terroir, one vintage” and would never consider assembling wines from different plots.
- VINIFICATION
HARVEST: Hand harvest with grapes picked early (not too mature)
VINIFICATION: Pneumatic press, static racking then put into vats or barrels. Indigenous yeasts, no chaptalisation, no additives except some sulphites. No stirring of the lees.
MATURING: This wine is aged in 5-year-old oak barrels

- TASTING NOTES
TASTING NOTES: This Macon Fuissé is a clear pale-yellow colour with hints of green. Its bouquet consists of fruity and floral aromas which give way to more fresh citrusy notes such as grapefruit. The palate reveals a slightly toasted flavour, before revealing summer fruits. This wine is both fresh and luscious as well as dry and well-fruited. It has good concentration, backed by enough acidity to provide a wine to drink now, or to keep for up to 5 years.
FOOD & WINE PAIRING: Their perfect all-round balance of vivacity, fullness, and smoothness plus aromatic complexity makes them easy to match with food. Poultry or veal in cream sauce does them justice in the winter, as does creamy risotto with meat, poultry, or fish. In the summer, they do justice to grilled fish, cold antipasto, ratatouille, or mixed salads with onions. They are even capable of taking sushi and goat’s cheese under their wing.
